Gyoza – Japanese Dumplings Filled with Bulgogi Beef, Chicken, and Vegetables

Wondering what gyoza are or how to make gyoza at home? These Japanese dumplings are pan-fried on one side, then briefly steamed, giving a perfect crisp-and-juicy bite for appetisers, mains or snacks.
What Makes Gyoza So Popular
A paper-thin wrapper encloses pork, cabbage, ginger and soy sauce. Variants include bulgogi beef, chicken-mirin or vegan shiitake-tofu mixes. Thinner and crisper than Chinese jiaozi, gyoza cook easily in a home skillet.
Homemade Gyoza Recipe
Ingredients
Dough: 200 g flour, 120 ml hot water, pinch of salt
Filling (sample): 250 g ground pork, 50 g cabbage, 1 tsp ginger, 1 tbsp soy sauce
Method
Knead dough, rest 30 min, cut 8 cm rounds.
Add filling sparingly.
Sear 2–3 min until golden.
Add 40 ml water, cover, steam 3–4 min.
Uncover, crisp base again.
