Rice Paper – Summer Rolls with Sriracha Sauce

Ingredients for 8 fresh rolls

  • 8 sheets of rice paper (22 cm diameter)
  • 1 carrot – julienned
  • ½ cucumber – sliced into thin sticks
  • ½ red bell pepper – thin strips
  • 1 ripe avocado – thin slices
  • 80 g cooked rice vermicelli noodles
  • 100 g cooked shrimp or marinated tofu (vegan version)
  • 8 lettuce leaves (romaine or iceberg)
  • A handful of fresh mint or cilantro

For the dipping sauce, you have two options:

1. Homemade Sriracha Mayo:

  • 4 tablespoons mayonnaise (regular or vegan)
  • 1 tablespoon Sriracha sauce
  • 1 teaspoon lemon juice
  • ½ teaspoon salt

Tip: If you prefer it milder, reduce the Sriracha or add ½ teaspoon of honey.

Mix all ingredients in a bowl until smooth and creamy. Chill for 10–15 minutes before serving.

How to roll rice paper without breaking

Prepare all ingredients before you start – rice paper softens quickly and you’ll want to work fast.

  1. Fill a wide bowl with lukewarm water.
  2. Dip one rice paper sheet for 6–8 seconds – it should be flexible but not sticky.
  3. Place it on a cutting board. Add in the bottom third: lettuce, a small amount of noodles, veggies, avocado, protein, and herbs.
  4. Fold the bottom edge over the filling, then fold the sides in, and roll tightly like a burrito. If it tears, wrap another sheet over it – problem solved.

Slice diagonally and serve with your preferred sauce. You can store the rolls for up to 24 hours in an airtight container lined with a damp paper towel.
